Our hardwood "Shorties" are designed for Gozney Dome - they're 15cm long and 10cm across, small enough to tuck them in the curve of the oven but big enough to burn for ages! They're kiln-dried to below 20% moisture so they light super easily, and burn more efficiently than seasoned logs.

Our standard logs are 100% beech. Why beech? Pizzaiolos all over Italy choose it because it burns hot and consistent, and embers better than other hardwoods. If it's good enough for the Italians, we figured it should be pretty perfect for all you happy Dome owners.

Our current Special logs are applewood from an orchard clearance in Herefordshire. They're just as good burned hot and fast for pizza, as they are used to add smoke to longer cooks. Apple is dense and knotty, so log diameter varies a little more.

Our fuel kit is made up of a large box of kiln-dried shorties, plus 8kg beech/ash kindling and 16 natural firelighters. We find this enough hardwood kindling for 8 heat ups but you'll probably have some shorties left at the end, depending how long you're cooking for Why hardwood kindling? It releases heat slower and more consistently than softwood, allowing you to heat your oven without a fast spike in temperature, and creates embers rather than burning out quickly.
