Holm oak trees are critical to Spanish and Portuguese farming, with 4 millions of hectares of woodland pasture producing acorns to feed the renowned Black Iberian Pig. Expert arborists carry out selective pruning to maximise acorn yield, before eventually trees must be replaced. Pruned branches & felled trees are turned into a charcoal revered across the Iberian peninsula.
The charcoal burns longer than anything I've ever used - a full basket in a kamado-style BBQ can burn low 'n' slow for 20 hours or more - but it also burns fiercely hot when needed for searing. The flavour imparted is sweet and smoky, much stronger than our British charcoal or anything produced on a factory scale.
It's perfect for kamados, and all steel smokers including gravity-fed, bullets, drums and offsets. It also works brilliantly well in kettle style BBQs, but the lump size can actually be a bit big.
