Cowboy butter is super easy to make, totally delicious, and also gives you the chance to serve up a bit of food theatre - what's not to love about that?
Ingredients
Block of softened salted butter
1 teaspoon garlic powder/granules
1 teaspoon chilli flakes
1 teaspoon smoked paprika
1 teaspoon Dijon mustard
1 teaspoon quality sea salt
1 teaspoon freshly ground black pepper
10g fresh parsley, finely chopped
1-2 teaspoons lemon juice - adjust to taste
Method
You don't get much easier than this...
Add your softened butter and all your other ingredients to a bowl, and mix until well combined.
Taste it - it might be missing heat, acidity or salt, or it might be perfect as it is - and adjust if needed. You want big flavour, because you're likely to be pairing this with beef.
Roll it up into a tight log using baking paper, and get it into the fridge - ideally make this the day before, but if you make it on the day just make sure to give it at least a couple of hours to set.
I love using this when resting steak - cut little pats off and sit them on top of your steak, where they'll melt. For some food theatre, grab a little chunk of hot charcoal and stick one on top of each of your pats, where it'll sizzle, smoke and wow your guests!
It can also be used as a dipping sauce or a butter baste during cooking, just melt it and away you go!
