Beef Short Ribs on a Weber Kettle

Only about 3 years ago I learned that by using the lid and vents of a 10-year-old Weber kettle that I'd bought for less than a hundred quid, I could turn it into an oven and cook anything I wanted. Now I love burgers and kebabs, but this opened up a whole new world of cooking to me and I haven't looked back!

It seems a lot of people worry about everything having to be done perfectly with longer cooks, so this is the first instalment of a series where I cook some popular BBQ dishes and explain the simple steps along the way - and hopefully show you that cooking epic BBQ food doesn't have to be daunting.

The most important thing you can do today is pick a cook, watch a few YouTube videos (starting, of course, with this one!) and get out there and give it a try.
