20 Minute Easy BBQ Flatbread Recipe

Making flatbread from scratch on the BBQ might sound scary but trust me when I say that flatbreads are one of the quickest and easiest things to cook on the BBQ. 


I've always found it strange that people will cook an unreal meal on the BBQ and then whack it on top of dry, ultra-processed supermarket flatbreads that don't come anywhere near homemade BBQ flatbreads.


Heather used to tell me she didn't really like flatbread, but made on the BBQ, they're one of her favourite meals. They're soft, they're light and they're so much tastier than any flatbread you'll buy in the supermarket.

20 minute BBQ flatbread recipe - the ingredients

If it's a quiet night in, to make two BBQ flatbreads you'll need:


  • 100g good quality pizza flour or bread flour (we use Sonata)
  • 75g natural yoghurt (the cheap stuff is fine)
  • Pinch of sea salt
  • Teaspoon of baking powder

If you're having friends over, just scale the ingredients to whatever you need to make more than two BBQ flatbreads.

BBQ flatbreads are super simple, so you don't need any specialist equipment. Have on hand -


  • Mixing bowl
  • Spoon (just a normal metal dessert spoon is fine)
  • Decent sized wooden board, or a clean countertop 
  • Rolling pin
  • BBQ tongs

20 minute BBQ flatbread recipe - the step by step

1. Mix all the ingredients together in a bowl with a spoon


2. Once the texture becomes 'bread-crummy', use your hands (wash them first!) to squeeze the flour through the yoghurt and bring it together. It might feel a bit dry at first but resist the temptation to add more yoghurt


3. Once it comes together as one dough mass, get it out onto the wooden board, or directly onto a clean countertop


4. Continue working the dough until it becomes one smooth mass, wait until you feel all of the granules of salt disappearing - it will take about two minutes


5. Work it into a rough doughball, it doesn't need to be perfectly round like bread or pizza, and wrap in cling film


6. Leave the dough ball in the cling film for 15  minutes while you get the BBQ lit (not sure how? Check out 'How to Light your Charcoal BBQ')

7. Cover the wooden board or countertop with flour, remove the dough ball from the cling film and cut it in half (or quarters, or eighths depending on how many you're making)


8. Stretch each dough ball by pressing down from the centre with the ends of your fingers


9. When they are roughly flat, cover the rolling pin with flour and roll them out until they are 2-3mm thick


10. Lay the flatbreads straight on the BBQ cooking grate, above the hot charcoal


11. The flatbreads cook super quickly on the BBQ so stay close by! Watch for it to bubble up on the whole surface, once it's done that it's ready to turn over


12. Once your flatbreads have a slightly beige colour all over with some beautiful brown spots where the bubbles have been, they're ready to come off the BBQ!


13. Load them up with spicy mayo, some salad leaves and BBQ cooked steak for the ultimate BBQ cooked lunch 🔥
