A Day of Cooking on a Self-Built Smoker & BBQ

A mate of mine, Rich, saw our chef series on YouTube, and got in touch a couple of months ago... "I'm not a chef," he said, "but can we cook together?"


I was sceptical, because Rich is a furniture-maker and fabricator (a brilliant one at that - check out his Instagram, Building Stuff Since Birth) but I had no idea what sort of cook he was. But as we talked, he explained it was more about his skills as a maker - and that he'd started to make a pretty unique style of smoker, that can be converted into an open fire grill in about 15 seconds.


I was sceptical again, because quite often when people come up with new ideas like this, they're a passion project but they don't translate into something that works in the real world - offsets are tricky things, right? It's tough to get the airflow right and to ensure the smoker retains heat at the best of times... but to do both of those things while also designing in a lift-off lid? I thought he was bonkers!


Was I right, or was I being unfair to my mate? You'll have to watch to find out...
